  WINEMAKER NOTES:  
 

Nothing contributes more to making great wines than purity of fruit. Our organically grown Cabernet Sauvignon benefits from perfectly ripened flavorful North Coast grapes. Barrel aging in handcrafted French and American oak accentuates the distinctive berry plum flavors in t this elegant, well-balanced Cabernet.

Extended maceration of the grapes was used to develop further color, flavor, and complexity. A higher amount of Syrah was used this year than in previous in order to add a rich fruit character and soften the wine.

  FOOD RECOMMENDATIONS:  
 

The 1999 Bonterra Cabernet Sauvignon pairs nicely with roasted prime rib, grilled steaks, herb-roasted chicken, and richer pasta dishes.

"82% Cabernet, rounded out with some Syrah and Merlot. As with all Bonterra wines, this one is well-mannered and balanced. The fruit is reminiscent of ripe plum and tart black currant, accented with a hint of toast and green olive. On the palate the texture is soft, the tannins firm but integrated, and the finish is dry and of moderate length."
